Greek Meatballs with Roasted Peppers + Lemon Oregano Slaw
Makes about 4 servings.
First things first: preheat your oven to 430.
Roasted Peppers
What you’ll need:
- 2 peppers (I had a red and an orange in the refrigerator — I’d say to skip the green ones, but any other color will work)
- Glug olive oil
- Salt and pepper
How to do it:
Quarter your peppers and be sure all the guts are removed. In a large bowl, toss the pepper, olive oil, and salt and pepper. Arrange on a sheet pan and toss in the oven. Roast for about 25 minutes, or until blistery (they should be close to done by the time you’re finished prepping everything else).
Greek Meatballs
What you’ll need:
- 1 lb meat (I had beef, but you could use any ground meat you had on hand)
- 1/4 cup onion, chopped
- 2 cloves garlic, chopped
- zest of one lemon
- 1 tbsp dried oregano
- salt and pepper
- lemon, thinly sliced
- olive oil for serving
How to do it:
Grab your large bowl and adequately mix meat, onion, garlic, zest, and spices. Roll into 1″ balls and place in a baking dish. I ended up with about 12 balls total, which was perfect (3 meatballs/person). Top each ball with a little slice of lemon.
Turn the oven down to 400 degrees.
Throw your meatballs onto the top rack and scoot your peppers down one (they may already be finished — if so, just take them out and let them sit). Bake at 400 degrees for 25 minutes, or until they’ve reached desired doneness.
Lemony Oregano Slaw
What you’ll need:
- 1 cups shredded cabbage
- 2 cup shredded romaine
- 1 large tomato, diced
- 1/4 cup finely chopped kalamata olives
- small handful finely chopped parsley
- 1 tbsp dried oregano
- juice of one lemon
- drizzle of olive oil
How you’ll do it:
Mix it all up.
Lemon Coconut Sauce
What you’ll need:
- 1/2 cup 100% pure coconut milk (the full fat kind)
- juice of one lemon
- 1 clove garlic, finely chopped
- 3 green onions (or chives), finely chopped
- drizzle of olive oil
How to do it:
Mix it all up.
Plate all these little components however you’d like. I started with the slaw, topped with the roasted peppers, then the meatballs, a bit of avocado, and a drizzle of the coconut sauce.
