I’ll spare you any lame attempts at excuses — I have none.

Let’s just get right to the point…

Today is day 17 of our second round of cleansing. This was a super successful couple of weeks for us. Proud to say we’re feeling healthful and, naturally, cleansed!

Tonight we had our best cleanse meal to date — one we’ll keep around post-starvation (that was an exaggeration: I have yet go be even remotely starved this round).

Chili espresso pork + baked lemon asparagus

How to do it:

Heat oven to 400.

Remove tough ends of asparagus, douse in fresh lemon juice and pepper. Bake for 15-20 minutes to desired tenderness (usually I prefer it crunchier, but this was GREAT squishy).

Remove and top with lemon zest.

Mix up a rub of:
Chili powder
Onion powder
Black pepper
Cayenne pepper
And yes, espresso powder

Give a couple cloves of garlic a rough chop.

With the tip of a knife, poke 4-5 pea-sized holes in each chop. Stuff each hole with as much garlic as you can fit.
Since your hands are already nasty, use ’em to work your dry rub well into your meat.

Heat a pan on high.

Cook each side of the pork about 3 minutes, depending on the thickness. Add 1/4 cup of water to the pan and cover, reducing to low heat. Cover and let cook for an additional 5 minutes. Remove and let rest.

Serve pork, serve asparagus, stuff face.
