Blueberry Yogurt Whole Wheat Pancakes

(compliments of the Bob’s Red Mill package)

What you’ll need:

1 cup whole wheat pastry flour

1/2 tsp. baking soda

1 tsp baking powder

1 egg

1 cup of milk

6 ounces of greek yogurt (i LOVE zoi — vanilla)

1 cup of blueberries

How to do it:

Mix your dry ingredients in a large bowl.  In a separate bowl, whisk together your milk, egg, and yogurt.  Add your dry ingredients.  Once combined, fold in your blueberries (you can really add whatever fruit you’d like, we had blueberries on hand).  

Heat your greased (with something healthful, hopefully — we use earth balance) pan or skillet and cook up them ‘cakes!  

Makes about 6 large pancakes.  

We topped ours with a couple tablespoons of homemade raspberry jam.  It was breakfast perfection…
